BBQless BBQ Wings

Nowadays, more than ever, going to the store can be a major chore. So what do you do when you want bbq, but don't have it? You use items in your pantry to fake it, that's what you do!! This ends up being more like a delicious BBQ-like glaze, but it's so flavorful and your chicken will end up being so juicy and mouth watering...this is a new staple in our household! All you really need is , jelly (any fruit will do but I personally used blueberry), soy sauce, and your favorite hot sauce. And you end up with deliciousness!


Ingredients:


2 lbs of chicken wings and drumsticks

1 /4 cup arrowroot flour (any kind of flour/starch will work!)

1 table spoon of blueberry jelly (any jelly would work, honestly, especially any kind of berry jelly)

2 table spoons of Soy Sauce (we use Gluten Free soy suace)

1 teaspoon of Sriracha Sauce (or your favorite kind of hot sauce)

1 teaspoon of garlic powder (separated)

2 teaspoon of Mango Habanero powder (separated (or your favorite kind of powdered pepper)


Directions:


1. Preheat the over to 250 F. Line a baking sheet with tin foil and place a lightly oiled cooling rack on top of the baking sheet. This allows the chicken to cook evenly.

2. In a medium sized bowl mix your flour, garlic powder, and Mango Habanero powder. Coat the chicken in the mixture and place on a lightly oil and place the coated chicken onto the cooling rack on the baking sheet.

3. Bake the chicken at 250 F for 25 minutes.

4. Turn the heat up to 400 F and continue to cook for another 40 minutes (no need to take the chicken out while the heat adjusts).

5. Create the glaze while the chicken cooks. Combine the jelly, soy sauce, sriracha sauce, garlic powder, and mango habanero powder.

6. When the chicken is fully cooked, remove from oven and brush on the glaze. Then put the oven on broil and broil the chicken for 3-5 minutes.


I got the idea for this from Chelsea Monroe-Cassel's cookbook, "World of Warcraft: the official cookbook" she has a recipe for Crispy Batwings (those of you who play World of Warcraft will be very familiar with those!) that was used as the base for my recipe. The Crispy Batwings are really crispy chicken wings, of course!
