Bacon Wrapped Peri Peri Chicken

Peri Peri chicken from Nando's is so incredibly delicious but trying to make it from home and tasting exactly like Nando's is next to impossible--even when you find scrumptious Nando's Peri Peri sauce at your local Pete's Fresh Market. So instead you create other tasty dishes! This one is super easy to prepare and is a favorite in our household. If you can't find, or in these times you are unable to get Peri Peri sauce, your favorite hot sauce will make a great substitute!


Ingredients:

Serves 2 people

2 Chicken Breasts

1 cup of Nando's Peri Peri sauce (divided into 1/4 cups)

4 strips of bacon (2 strips per chicken breast)


1.Preheat your oven to 350 F.

2. Poke about half a dozen little holes through out your chicken breast (i used a toothpick) and pour all but a bit of 1/4 cup of Peri Peri sauce over the chicken and massage it in, then pour the rest on top of the chicken breast (if you want you can marinate the chicken in the Peri Peri sauce up to 24 hours).

2. Take a strip of bacon and wrap it around the chicken breast starting at one end. Once you run out of one strip, start the next bacon strip right where the first one ends. Place the chicken on to the oven safe dish and do the same to the other chicken breast.

3. Pour the rest of the half cup of Peri Peri sauce on the bottom of the dish. This helps keep the chicken moist and really marinates the chicken as it cooks.

4. Once the oven is preheated place the chicken in the oven for about an hour. Flip the chicken over after half an hour. Once the inside of the chicken reaches 165 F it is done cooking.

5. Turn the oven to Broil and place the chicken under the broiler. Crisp up the bacon under the broiler for 2-5 minutes then flip it to crisp up the other side. And you're done!


Rice and a crisp salad make a great side (though we ate it with a side of butternut squash roasted in ghee and honey)!!
